Jessica Beaudoin

Jessica Beaudoin, MS, RDN, is an Assistant Clinical Professor in the Masters of Science in Clinical Nutrition program at University of the Pacific. With a background in both culinary and clinical nutrition, Jessica is a Registered Dietitian who focuses on translating the science of nutrition into food terms for patients and clients. Jessica attended CSU Long Beach where she completed her Dietetic Internship and receive an MS in Nutritional Science and received her BS in Culinary Nutrition from Johnson & Wales University in Providence, Rhode Island. Jessica’s research focuses on food literacy among marginalized communities, including hands-on, culturally-grounded culinary classes with uninsured Latino patients with diabetes. An avid distance hiker, Jessica has thru-hiked several trails and spends much of her free time in the mountains and cooking delicious food both on- and off-trail.
